EGG AND POTATO BALLS


Ingredients

3 large boiled potatoes, 2 eggs,¼ small onion, chopped, 1 tspn parsley, ½ cup breadcrumbs, flour to coat


Mash the potatoes and mix in 1 beaten egg. Add the chopped onion and parsley. Roll this mixture into egg shapes and coat them with flour. Beat the other egg. Now coat the egg and potato balls with egg and dip them in the breadcrumbs. To cook, either fry them in a little butter or oil, or brown them in a moderate oven, occasionally basting them with a little butter.
